Tuna and Bean Salad


Tuna and Bean Salad

Serves 1

Cut 3 fresh tomatoes into wedges and put into a bowl with flaked tuna and a handful of parsley.  Add shredded lettuce, sliced cucumber, red onion, cooked green beans and diced red pepper.

Sprinkle with fat free salad dressing and toss well.

Serve topped with a quartered hard boiled egg, a tsp capers and a handful of pitted olives.
