Tomato Soup
Serves 2
0 pts and no count
2 x 400g tins plum tomatoes
2 tbsp tomatoe puree
handful of spinach
1 garlic clove, crushed
400ml veg stock
handful fresh basil leaves
In a large pan, heat the tomatoes, tomato puree,
spinach and garlic for 2-3 mins.
Pour in the stock and add the basil leaves.
Bring to the boil, reduce the heat and simmer for
8-10 mins.
Blend the soup.
Serve topped with a spoonful of 0% greek yogurt if
you like.
