Spicy chilli beans with rice

Spicy chilli beans with rice

Serves 1

1 tsp sunflower oil

1 small onion, chopped

½ green pepper, chopped

 ½ level tsp chilli powder

4oz canned red kidney beans

¼ pt vegetable stock

1 level tsp tomato puree

1 ½ oz brown rice

vegetables

Saute onion and pepper in oil. Add chilli powder and cook for a few minutes. Mix in drained kidney beans, stock and tomato puree. Simmer until cooked. Serve with rice and vegetables
