Creamy Chicken with Mushrooms

Spray oil
6 shallots - quartered (or I sometimes use small onions if I can’t get
shallots)
1 green pepper - diced
2 skinless chicken breasts – cut into strips
2 heaped teaspoons whole-grain mustard
250g sliced mushrooms (I use tinned they are more convenient for me)
295g can 99% fat free Campbells Condensed Chicken Soup
Fry the shallots or little onions and pepper in the oil. Add
chicken and mustard and stirfry until chicken browns. Add mushrooms and
stirfry for a little longer. Pour in soup (Only one can full, only add
can of water if you want the sauce runny) Serve with boiled rice.
This recipe is supposed to make 4 generous portions, but use your judgement as
to your appetites. After you have made it you will see how much it makes
and may increase the ingredients.
