Chicken with Lemon and Soy Sauce

NO COUNT RECIPE

Serves 4


4 x skinless chicken breast
1 egg white beaten
1/2 cup dry Polenta, cornmela  or krisproll crumbs
3Tbsp lemon juice
3 Tbsp soy sauce

Pound chicken breastsuntil they are uniform in size.

Dip into egg and then polenta or crumbs. 

Spray oil a large frying pan.  Add chicken and saute on both sides until almost golden brown.

Combine lemon juice and soy sauce and add to pan.  Cover and cook 5-10 minutes until just tender
