Chicken and Vegetable Pillows.
Per person you will need :
Total points per serrving : 5.
1 skinless chicken breast
Half a chopped leek
A few baby carrots
Handful of mixed mushrooms
Half a glass of dry white wine
1 chopped garlic clove
half a red onion, sliced
1 cal olive oil spray
Salt and pepper to taste
Squeeze of lemon juice
All you need to do is heat the oven to 200C, take a large sheet of foil and on
one half place the seasoned and oil sprayed chicken and vegetables. Fold over
the other half, and fold up the edges, turning over twice to make a pillow
shape with one long side still open. Pour in the wine and lemon juice and seal
up the last side. Put on a baking tray and bake for 25 mins or so and when you
open up the parcel the most wonderful smell will waft out and everything inside
will be juicy and tender having steamed together and a nice sauce will have
been created in the process.
This would work very well with salmon too.
