Bahmi Goreng

Bahmi Goreng

2 tlbs chopped shallots
1 large tomato chopped
1 garlic clove minced
1 tlbs chopped & peeled ginger
freshly ground black pepper
10 fresh coriander sprigs
1/4 cup chopped fresh basil
4 skinless chicken breasts sliced
1 carrot julienned
1 stalk celery chopped
1/4 cup shredded Chinese cabbage
1/2 capsicum cut into strips
1 cup Chicken Stack
500gms cooked thin egg noodles

Heat pan & cook chicken in a spray of olive oil, remove from pan
Combine shallots,tomato,garlic, ginger, pepper, coriander & basil & saute for 2-3 mins
Add chicken, carrot, celery, cabbage & capsicum & saute for a few minutes. Add chicken stock & noodles. Reduce heat & simmer for 5 minutes. Can add chilli if wanted.

serve
