Beef & Veg Layer

Serves 1



4oz beef fillet
1 large onion
4 large tomatoes
4 courgettes
1 tsp dry English mustard
1 dsp low-fat fromage frais or yoghurt
1 tsp honey
2 cloves garlic, crushed
salt & pepper


preheat oven to gas mark 4 (180c,350f). slice beef thinly into at least 4 slices. slice the onion, tomatoes and courgettes, thinly.    heat a frying pan and flash fry the beef for a few seconds on each side to seal it.  mix the mustard, fromage frais or yoghurt, honey and garlic to a paste and spread over the beef. season to taste. place 2 beef slices in a baking dish, cover with slices of onion, tomatoe and then courgette.  place the remaining beef slices on top, repeat the the layers of vegetables.  place in the oven and bake for 20 mins. 

Serve with a side salad and a small portion of potatoes.
