Mixed Veg Risotto with Spicy Chicken
200g frozen mixed veg
200g
Arborio or other risotto rice 150g quark
1 Stock
Cube
1 tsp smoky
paprika
1 pack
ready cooked Iceland hot and spicy chicken breast slices low calorie cooking Spray
1 onion
Salt and pep
Put kettle to boil with 4ooml water. Then over medium heat,
fry onion until softened. Add thawed vegetables. Then stir in the rice and the
crumbled stock cube.
Allow to stir cook for about 2 minutes. Add the hot
water gradually stirring all the time. Allow each portion of water to be
absorbed before adding more water.
Once all the water has been absorbed, stir through the paprika, chicken, quark, salt and pepper. Cook for a further S minutes then remove from the heat and Serve with salad of choice.
