Summer Nicoise
Serves 4
Points plan 3 pts per serving
Core 1pt the lot (pumpkin seeds)
In a large bolw whisk together 1½ tsbp olive oil, 1½ tbsp
lemon juice and 1 tsp wholegrain or Dijon
mustard.
Add 175g lightly cooked fine green beans, 100g shelled
frozen broad beans, 2 large sliced tomatoes, 15g (1tbsp) pumpkin seeds and 50g
green or black olives.
Season and toss together.
Arrange cos or Romaine lettuce leaves on 4 plates and share
out the bean mixture.
Top each plate with 50g drained, canned tuna in brine and
half a hard boiled egg. Add chopped mint or parsley and serve.
