CRUNCHY PINEAPPLE SALAD

CRUNCHY PINEAPPLE SALAD

Serves 4

1 small head crisp lettuce, chopped
1 med red onion, finely chopped
2 sticks celery, chopped
1 green pepper, seeded & chopped
1 medium carrot, grated
6-8 radishes, sliced
4 rings pineapple, finely chopped
1 x 150g pot 0% total greek yogurt
salt & pepper to taste

Comibine, lettuce, onion, celery, pepper, carrot, radishes and pineapple in a large salad bowl.  Toss gently to mix.  Add the greek yogurt and mix well.  Season to taste and serve
