Watercress & Leek Soup

1 pint of vegetable stock
1 medium leek
1 large handful of watercress
Chop the leek and simmer in the stock for 10 mins.
Remove the leaves from the watercress and discard the stalks.
Turn off the heat, add the watercress leaves, stir and stand for 5 mins.
Whizz in a food blender for a few seconds.
Season to taste and serve.
This makes a generous serving for one. For a more filling
soup add a small potato and simmer longer. Adjust the points as necessary.
