Soften
1 chopped onion & 1 crushed clove garlic in a little water. Stir in 1 tsp chilli
powder, 2 tbsp tomato puree (1 sin) and 6 oz long grain rice. Add ¾ pt
vegetable stock made with Vecon and bring to the boil. Simmer for 15 mins or
until the rice is cooked. Add 1 chopped green pepper, 2 oz mushrooms (chopped),
7 oz can red kidney beans and 7 oz sweetcorn. Simmer for 5 minutes & serve.
