Serves 4
500g lean minced beef
1 onion, sliced
1 green pepper, sliced into rings
1 red pepper, sliced into rings
1 clove garlic, chopped
2 tablespoons chilli powder
1 teaspoon salt
1 teaspoon ground black pepper
150g salsa
200g uncooked brown rice
Preheat oven to 350°F, 180°C, Gas Mark 6.
Sauté beef; add onions, peppers, garlic, chilli powder, salt and pepper.
Cook until vegetables are beginning to get tender, stirring frequently to
crumble meat - about 3 minutes.
Add salsa and rice. Put in a casserole, cover. Bake 40 minutes, or until rice is cooked, stirring once or twice.
