Spanish
style omelette
Serves 1
1 tsp vegetable oil
½ chopped onion
4oz any vegetables, diced (I used broccoli)
4oz boiled potatoes
2 eggs
Heat oil in a non stick pan, add onion and
vegetables. Cook until soft then add potatoes. Cook for a few minutes. Beat
eggs and add to the pan. Cook over a medium heat until set. Serve with veg or
salad
