CARIBBEAN RICE

CARIBBEAN RICE

 

Serves 2

 

125g brown rice (dry weight)

75g frozen peas

½ red pepper, finely sliced

½ red onion, finely diced

125g fresh or canned in juice pineapple, cut into chunks

2 tbsp chopped fresh coriander

1 tomato, deseeded and diced finely

2 tbsp Italian style dressing

 

Cook brown rice, drain and rinse in cold water then drain thoroughly.

Put peas in a bowl, cover with boiling water, leave 5 minutes then drain and cool.

Mix everything in a bowl, season to taste.
