CURRIED
TUNA PASTA SALAD
Serves 1
50g mini pasta shapes
80g tin tuna, drained and flaked
Dressing:
½ tsp curry powder
60g low fat plain yogurt
½ red or yellow pepper, diced
75g cucumber, diced
Cook the pasta, drain and allow to cool.
Mix the curry powder into the yogurt, season to
taste and mix with the pepper and cucumber.
Stir the cooled pasta into the dressing then stir in the tuna.
