Smoked Tofu with Pasta Shells

Serves 4
1.5 Sins per serving
340g/12oz wholemeal pasta shells
2-3 tsp lemon juice
8 spring onions, sliced
1 tbsp fresh root ginger, grated
2 tbsp vinegar
227g/8oz smoked tofu, cubed
2 tsp Extra Virgin Olive Oil
2 cloves garlic, crushed
2 tbsp tomato purée (1 Sin)
1 tsp honey (1 Sin)
Salt & freshly ground black pepper
1 tbsp fresh parsley
Cook the pasta shells by simmering in water with
1 teaspoon of the lemon juice for 10 minutes.
Meanwhile, for the sauce, heat the oil and fry
the onions, garlic and ginger for 2 minutes. Add the remaining lemon juice,
tomato purée, vinegar, honey and tofu and mix well. Cook gently for a further 5
minutes. Season to taste.
When the pasta is cooked, drain well. Mix with
the sauce and serve garnished with fresh parsley
