Jan’s Quick Chicken Curry

Ingredients (some of this I just chucked in so I have estimated amounts!):-
2 garlic Cloves – chopped
Low fat cooking spray
4 Chicken breasts
1 tsp ground coriander
¼ teaspoon turmeric, ground
1 tsp Chilli Powder - adjust to taste if you like more spice add more!
1 tsp Tandoori Spice powder - adjust to taste if you like more spice add more!
Good splash of milk about 100 ml(?)
Garlic and Herb Cream Cheese (ELF) about 30g ish (about ¼ of a packet)
Passata splash about 100 ml(?) (if you haven’t got any passata use a tin of
tomato’s wiz with juice in a processor and run juice through a sieve to get out
the bits and voila passata!)
2 tablespoon of fresh coriander (or fresh oregano)
2 tablespoon lemon juice
1. Spray frying pan with oil. Add garlic and cook for a few minutes over a high
heat until garlic browns.
2. Add the chicken and fry for about 4-5 mins until chicken is sealed and
lightly coloured
3. Sprinkle on the dried spices coat the chicken and fry for about 1 minute
4. Poor on Passata, milk and ELF. Stir until elf dissolved – check for taste
you may want to add a bit more milk or passata or even ELF! Simmer for about 5
mins
5. Remove from heat sprinkle over the lemon juice and chopped coriander.
