Hairy Dieters Golden Vegetable Soup
Serves 3 for main meal or 6 for starter

Large Butternut Squash, cubed (0)
4 Carrots, sliced (0)
1 Onion, Diced (0)
2 Clove Garlic (0)
1 Oxo Vegetable Cube (0)
Chives, snipped (0)
Spray frylight in large saucepan and
fry the onion and garlic for 10 minutes until softened, stirring occasionally.
Add butternut squash and carrots. Pour
over 1 litre boiled water and crumble the stock cube on top and bring to the
boil.
Simmer for 20 minutes until tender.
Remove from heat and let cool for 10
minutes.
Blend with a stick blender until
smooth. Reheat and season with black pepper.
Serve with snipped chives.
