KERALA CHICKEN KEBAB

Serves 4
frylight
pinch black mustard seeds
pinch cumin seeds
1 clove garlic, chopped
½ green chilli, chopped
¼ tsp fresh ginger, chopped
½ onion, chopped
pinch ground coriander
pinch ground turmeric
175g potato, cooked & coarsely grated
300g minced chicken
2 tbsp fresh coriander, chopped
2 tbsp lime juice
Spray base & sides of a frying pan with frylight. Fry the mustard seeds for a few minutes until they pop. Add the cumin seeds, garlic, green chilli, ginger and onion & fry for 5 mins. Transfer to a bowl. Add the remaining ingredients and mix well.
Divide into 12 patties and shape into balls. Grill for
15 mins, turning once. (Or cook in the oven...Gas 5 for about 15-20
mins)
