Style Mince & Rice

350g extra
lean minced beef
1 onion,
chopped
1 clove
garlic, crushed
2 sticks celery,
sliced
1 green
pepper, deseeded & chopped
2 tsp dried
oregano
2 tsp dried thyme
2 tsp paprika
1 tsp ground
cumin
1 tbsp tomato
puree
180g brown
rice (dry weight)
450 ml beef
stock
¼ tsp hot
pepper sauce eg Tabasco
pinch cayenne
pepper
salt &
pepper
2 tomatoes,
chopped
2 spring
onions, chopped
In a large
non-stick pan, dry fry the mince and pour off any excess fat. Add onion, garlic, spices, tomato puree and
herbs and cook stirring for 2 mins. Add
remaining ingredients except tomatoes and spring onions and bring to the boil.
Lower heat,
cover and simmer for 20 mins, stirring occasionally until rice is tender. Stir through the tomatoes and spring onions
and serve.
