CHARGRILLED VEGETABLES WITH BASIL


CHARGRILLED VEGETABLES WITH BASIL

Serves 1 for 1 point PLUS bread and spread

Take ½ pepper, ½ courgette, 1 tomato, and ½ onion.  Wash & slice the veg, brush with 1 tsp oil.  Cook in a hot oven until soft and browned at the edges.  allow to cool and pile onto bread.  Top with basil leaves.
This could be 0 points if you use Frylight to roast the veg instead of oil.
This would also be nice with soft cheese spread onto the bread.  Remember to add the points for the cheese.
