BEAN AND
ROASTED RED PEPPER DIP

1 onion,
finely chopped
2 tbsp fresh
basil, chopped
1 x 400g can
pinto beans, drained
2 roasted red
peppers from a jar, thinly sliced
Fry the onion
in frylight over medium heat until soft but not browned. Add basil and beans
and cook for 5 mins, stirring frequently. Gently mash the beans so that
they are only part mashed. Stir in the pepper.
Serve
