CREAMY
SCRAMBLED EGGS

6 medium eggs
50g Quark
cheese
1 tbsp
chopped fresh parsley or chives
Crack the
eggs into a microwaveable bowl and whisk well. Add the Quark and beat
until well mixed. Season.
Cook on full
power for 90 seconds, beat and cook for a further 90 seconds.
Remove from
the oven, fold in the parsley or chives and serve.
Take a medium
pitta bread (2-2½ pts, depending on make) Split the pitta in half
completely and open it out, cut side up.
Spread the
cut side with tomato puree, right to the edge so it doesn't burn when you grill
it.
Top it with
sliced tomatoes, onion, mushrooms and grill gently for a minute or two to warm
the veg. Add some torn basil leaves and olives if you like them (10 for ½
pt)
Take half a
ball of Sainsburys BGTY light mozzarella (2½ pts), slice it and put on top of
the veg. Season and grill until the cheese is melted and bubbling.
Lovely served
with a salad.
