CREAMY GARLIC MUSHROOMS
Serves 4
Points per recipe 2½
Points per serving ½

Freezing not recommended

4 large flat mushrooms
100g low fat soft cheese
2 garlic cloves, crushed or finely chopped
1 tbsp chopped fresh parsley
2-3 tsp skimmed milk
salt & pepper

Trim the mushroom stalks and arrange the mushrooms, stalk side down on a large microwaveable plate.  Microwave on HIGH for 3 mins.
Meanwhile, preheat the grill.
Put the cheese into a bowl and mix in the garlic, parsley and milk, beating until smooth and creamy.
Turn the mushrooms over and divide the cheese between them.  Level the surface, season then grill until lightly browned and bubbling.  Serve at once.

Tip: The garlic cheese mixture can be added to thinly sliced, poached mushrooms and used as a jacket potato filling.  (Remember to add the points for your potato)
