1/2 pt Stir-fried cabbage and peppers

2 tsp oil

1 small onion, finely sliced
1/2 red pepper, sliced
1/2 yellow pepper, sliced
2 cloves garlic, sliced
1/2 firm white cabbage, finely sliced
25ml sherry (0.5pt)

Heat the oil
in a large frying pan or wok. Add the onion and stir-fry for 3 mins until
starting to soften. Add the peppers and stir-fry for 2 mins then add the garlic
and cabbage. Stir-fry over a high heat for about 3 mins until wilting then add
the sherry and some seasoning. Allow the sherry to bubble away then serve
immediately.
Only 1/2 pt
per serving for this lovely colourful veggie side dish. Obviously if you used
oil-spray it would be 0 pts, but it really is worth using the oil here, or it
tends to scorch. Try it even if you think you don't like cabbage - it tastes
completely different when you stir-fry it, with a sweet and nutty flavour.
