Sweetcorn and Bacon Chowder

1 onion,
finely chopped
6 rashers
WW extra trimjmed bacon, chopped
350g
potatoes, peeled and diced
800ml
vegetable stock
1 x 330g
tin sweetcorn, drained
125ml
skimmed milk
Chopped fresh
flat leaf parsley
Mist a
large pan with cooking spray and add the onion.
Cook over medium heat for 5 mins, stirring until starting to
soften. Add the bacon and cook for 5
minutes.
Add the
potatoes and vegetable stock. Cover and
bring to the boil. Simmer for 6-8
minutes or until the potato is tender, then add the sweetcorn and milk. Gently warm through, season well. Serve in
bowls garnished with parsley.
