Beef Massaman
Another
recipe from the WW Irresistable magazine.

Low fat
cooking spray
1 large
onion, finely chopped
3 garlic
cloves, crushed
½ tsp
cayenne pepper
1 tbsp
ground coriander
½ tsp
ground cumin
450g
braising steak, trimmed of all fat and cubed
350g
potatoes, peeled and cubed
2 whole
cardamoms
1 cinnamon
stick
½ -1 tsp
lazy chillies
200ml low
fat coconut milk
200ml beef
stock
2 tsp
tamarind paste
1 tbsp
Thai fish sauce
1 tbsp
brown sugar
120g Thai
jasmine rice (dry weight)
Chopped fresh
coriander
Preheat
oven to Gas 4/180ÂșC
Heat a
large deep oven-proof casserole dish and spray with low fat spray. Add the
onion and garlic and saute gently for 3-4 minutes until the onion starts to
soften.
Add the
cayenne, ground coriander, cumin and steak and fry gently for 1-2 minutes
making sure the spices don’t burn.
Add all of
the remaining ingredients except the rice and coriander. Add 100ml water and
bring to the boil, stirring occasionally.
Cover and
place in the oven for 1½ hours until the beef is tender.
Cook the
rice according to the pack instructions.
Serve the
rice and beef curry sprinkled with the coriander.
