Chunky Sweetcorn Chowder
A Slimming World recipe

200g quinoa (dry weight)
2 medium potatoes, peeled and cut into 2cm dice
400g sweetcorn kernels
800ml stock
200g green beans cut into 1 cm lengths
1 celery stick, diced
1 red pepper, deseeded and diced
2-3 garlic cloves chopped
2cm fresh ginger, grated
1 green chilli, deseeded and finely chopped
1 tsp ground coriander
1 tsp ground cumin
1 tsp paprika
½ tsp oregano
½ tsp thyme
1 bay leaf
4 spring onions, finely sliced
6 tbsp finely chopped fresh coriander
salt and pepper
Put all the ingredients into the slow cooker. Season and mix well. Cover and cook on low for 4 hours. Remove the bay leaf before serving.
