Borlotti Beans with Braised Pork
Another Greg Wallace recipe.
Serves 2

4 tsp extra virgin olive oil
2 x 150g lean pork loin steaks
2 plum tomatoes, roughly chopped
2 cloves garlic, crushed
Bunch fresh sage
150ml skimmed milk
400g tin borlotti beans in water, drained
Salt and black pepper
Lemon wedges to serve.
Heat 2 tsp oil in a frying pan and brown the pork steaks
on both sides. Add the tomatoes. Garlic and
sage and cook for 1 minute.
Pour the milk over the pork to half fill the pan. Cover with a lid and bring to simmering point
then cook on low heat for 15 minutes.
Rest the meat in the pan with the lid on for 5 minutes.
Meanwhile warm the remaining oil over a low heat in a
small pan. Add the beans and cook gently
for 5 minutes. Season to taste.
Set aside a fifth of the beans. Mash the rest and then divide onto 2 plates.
Top with the whole beans and serve with the pork steaks
and sauce, finishing with a wedge of lemon.
