Plums in
Port
Another

750 ml
water
150g
granulated sugar
150ml port
1 kg
plums, stoned and halved
80g
reduced fat crème fraiche
Put the
water and sugar in a large pan and slowly bring to the boil, stirring until the
sugar dissolves. Boil without stirring
for 5 minutes.
Add the
port and plums and bring to a gently simmer.
Poach the plums for about 5 minutes until they are soft but not falling
apart.
Carefully
remove the plums from the liquid. Boil
the liquid until it is well reduced and syrupy.
Pour the
syrup over the plums and chill. Serve with the crème fraiche.
