Herby Chicken Breasts

6 chicken breasts, skinless & boneless
Marinade:
200g low fat greek yogurt
3 garlic cloves, finely chopped
2 tbsp finely chopped flat leaf parsley
1 lemon, zest only
few sprigs thyme, leaves only
Mix marinade ingredients in a non-metallic dish. Add
chicken and leave for at least 1 hour.
Preheat grill to high. Put chicken and marinade in a tray,
season well and grill for 4-5 mins each side until cooked through and golden.
Tip: Can be marinated up to 8 hours ahead, keep covered in
the fridge
