Pumpkin Curry

Pumpkin Curry

Serves 2

1 pt per serving

Use spray oil to make this 0 pts and also No count

 

2 tsp Olive Oil
1 large Onion chopped
2 cloves Garlic minced
1/2 teaspoon cumin seeds
salt
1/2 teaspoon chilli powder
1/2 medium pumpkin chopped in small pieces.

 

Heat the oil in a pan
Saute the onions and garlic until soft , add cumin chilli and salt , cook for 5 mins.
Add pumpkin stir well and cover . Cook on slow heat until tender , about 10-15 min.

Nice served with Naan bread

Mushroom stir-fry with lemon noodles

115g of Sharwoods chinese fine egg noodles
1 veg stock cube
zest and juice of 1 lemon
1 med red onion, finely sliced
2 garlic cloves, crushed
450g assorted mushrooms
sliced
2 tsp fresh giner, peeled and finely chopped
1 tbsp light soy sauce
snipped fresh chives to garnish

1.Cook noodles in a pan of water with veg stock cube. Drain & toss with the lemon zest and juice.
2.Heat a non-stick wok or frying pan, add the onion and garlic and cook until soft. Add mushrooms, ginger and soy sauce. Stir fry quickly over a high heat until the mushrooms are just cooked.
3.Add the noodles and mix well together
4.Serve the stir-fry in warmed bowls and sprinke with snipped fresh chives

  

Lentil Curry

2 Large onions chopped finely.
150g Chopped tinned tomatoes.
225g Butternut squash, peeled and chopped finely.
1 bunch frech coriander, chopped finely.
150g Tesco red split lentils (or yellow)
1 tsp turmeric
1 tsp chilli powder
1 tsp caster sugar
450ml water
4 tbsp vinegar
1 tsp cumin seeds, crushed (or same quantity ground)
salt and pepper

 

Put all ingredients into a pan and simmer for about an hour or until the lentils are tender.

Mash the lentils with a wooden spoon and serve.


Nice with jacket potato or with rice. You can add any meat you like to it also.

1 onion chopped
1 carrott grated
100g red split lentils
tin chopped tomatoes
1/4 pint water
4 tsp asda veg gravy granules
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp curry powder
pinch chilli powder

 

Heat oil in pan and add chopped onion and carrott, fry for about 2 minutes
Add spices and lentils and fry for another minute
Add water and once boiling add tinned tomatoes
Simmer gently for about 15 minutes.Add gravy granules to curry to thicken then serve

 

A very tasty and filling curry for 2, lovely with Basmati Rice (Add points for this)
If you prefer to use another thickener the points would be less as its 2 points for the gravy granules! 

Leek and bean casserole

No Count if you use krisprolls instead of breadcrumbs

 

1 leek, sliced
1 onion, chopped
1 or 2 garlic cloves, crushed
1 tin of mixed beans, drained

1 pepper, chopped
1 carrot, chooped
1 tin tomatoes
1/2pt stock
mixed herbs
2 slices of bread, crumbed (use krisprolls for no count)

 

Fry onions, garlic, leek, carrot and pepper for a few minutes.
Add remaining ingredients and bring to boil.
Pour into casserole dish and cover with breadcrumbs.
Bake for 15-20 minutes at 180C.

 

If you've got extra points, mix grated cheese with the breadcrumbs.

Creamy Mushroom Risotto

For No Count: 1 pt for the vermouth if extra light philly is used

 

100ml Vermouth (1pt)
2oz Risotto Rice
½ tub low fat Boursin Cheese (or extra light philly for no count)
½pt Veg Stock
1 Red Onion
250g Mixed Mushrooms
Garlic
Parsley

 

Chop the onion quite small and place in saucepan with crushed garlic and a small amount of the veg stock and lightly cook.

Add the Mushrooms roughly chopped.

Then add the Risotto Rice and stir well. Add the glass of Vermouth and stir again and allow to reduce.

Then a small bit at a time add the Veg Stock, cover the pan and stir occasionally until all liquid added.

Takes Approx 20 mins. Then add the soft Cheese and the parsley and stir throughly and heat through.

Serve in bowl with Green salad if you wish.

  

Mexican Quesadillas

20g healthy eating cheese (1)
1 laughing cow lite,(0.5)
no point veg, ie mush, peppers, onions, courgettes, chilli peppers, (optional for .(0.5 )point -2 big heaped teaspoons of kidney beans.

Fry all vegetables in fry lite, to your liking, (soft or hard),
Spread laughing cow lite on bottom wrap and salsa on top one
heap veg on bottom wrap, cover with cheese, put other wrap on top...cover plate in foil and put in oven till cheese melts (bowt 3 mins), take off foil, best eaten with knife and fork,,

These are a very substantial lunch, particularly if served with a large side salad, 0 points, and make your own garlic may with hellmans extra lite

 

Baked Aubergine

Use spray oil to make this both no points and no count

 

1 aubergine
2 tsps olive oil
1 courgette
half an onion
2 cloves of garlic
1 can chopped tomatoes
lots of fresh basil
s&p

 

Slice aubergine in half and scoop about 2/3 of the middle out. Place aubergine shells in oven (180c) Heat the garlic and onion in the oil. Add courgette, chopped aubergine centre, tomatoes, s&p and basil. Simmer until the aubergines in the oven are browning, then pour mixture over them and bake for 20 min.

 

This is really filling - add pasta for a main meal. You can use mushrooms, shallots, fresh tomatoes and oregano if you like too, or even BeGoodtoYourself mozzarella (for some extra points)
