King Prawn Saag

low fat cooking spray
1 medium onion, chopped
1 garlic clove, crushed
2.5cm (1") piece fresh root ginger, grated
½ tbsp curry powder
½ tsp chilli powder
400g can chopped tomatoes
200g raw king prawns, heads & shells removed, defrosted
if frozen and patted dry on kitchen paper
100g baby spinach
salt & pepper
Heat a non-stick pan and spray with the cooking spray.
Stir fry the onion for about 5 mins until soft.
Add all the ingredients except the prawns and spinach and
heat gently until simmering, then cover the pan with a tight fitting lid and
cook for 10 mins.
Remove the lid, add the prawns and spinach and stir fry for
4-5 mins until the prawns are bright pink and the spinach has wilted.
Season and serve.
