Semolina Cake

Semolina Cake

Serves 12

Points per slice:  1½

250g semolina
1½ tsp baking powder
½ tsp baking soda
½ tsp salt
3 heaped tbsp Splenda
250ml fat free yogurt
125ml skimmed milk
2 eggs
1 tsp vanilla extract
Zest of 1 lemon

Mix dry ingredients in a medium bowl. Mix liquid ingredients in a small bowl. Gently fold the wet into the dry. Pour into a 20cm x 25cm (approx) baking tray that has been sprayed with Fry-Lite.

Bake at 190 deg C/gas mark 5 for 25-30 minutes or until the edges are a golden brown and a toothpick inserted in centre comes out clean.

Allow to cool and cut into 12 pieces.

You can add things like raisins to it (1 tbsp is 1 point) or fruits like blueberries. Or use orange zest instead of lemon.

You can enjoy a piece on its own or top it with yoghurt. You can even pour jelly and fruit over it to make a trifle base.
