Meringue Cookies

Meringue Cookies

Makes 12 cookies

4 egg whites
3 tbsp low fat dried milk powder
1 tsp vanilla essence
1 tbsp sweetener
¼ teaspoon cinnamon

Preheat oven to 275ºF.

In a large bowl, beat egg whites with electric mixer on medium-high speed until stiff, but not dry. Add milk powder, vanilla and sweetener, beat on low speed just
until evenly mixed.

Drop cookies by rounded tablespoonfuls onto ungreased baking tray. Bake for 45 to 50 minutes, or until lightly golden. Transfer cookies to wire rack to cool completely. Dust lightly with cinnamon.
