Mock Goose

Adapted from WW Cookbook
Serves 1
180g liver
dried polenta, approx 1½ tsp seasoned with salt & pepper
½ onion
1 medium cooking apple, peeled
100g potato, peeled
½tsp dried sage
140ml water or stock
seasoning
Preheat oven to 350ºF/180ºC/Gas 4
Dip liver in the seasoned polenta and place in a baking
dish. Slice the onion, apple and potato thinly. Place the onion
over the liver, followed by the apple, seasoning with sage, salt & pepper
as you go. Top with a layer of potato. Add the water or stock.
Cover with a lid or foil and bake for 40 mins. Towards the end, uncover
and allow the potatoes to brown.
