Mini meringues
Makes 20
Points per 3 meringues: 3 (Original points)
2 egg whites
115g caster sugar
1 level tsp cornflour
1 tsp vinegar
vanilla extract optional
Pre heat oven to 130ºC
Beat the egg whites until stiff then add the sugar a little
at a time still beating. Once incorporated add the cornflour, vinegar and
extract if using and continue to beat for a couple of minutes.
Line a tray with baking paper and dollop little blobs of
meringue onto the parchment leaving a little space between each.
Bake them in the oven for around 40 mins then turn the oven
off and allow them to cool in the oven. This gives a crisp shell and sticky
chewy centre.
