Baileys Banana
Muffins
Makes 8
Points per muffin: 4½ Original points
1 egg
100ml skimmed milk
2 tsp instant coffee
50g low fat spread, melted
1 medium banana, mashed
2 tsp baking powder
200g plain flour
1 tsp vanilla essence
100g light brown sugar
60g icing sugar
1 tbsp Baileys Irish Cream
8 banana chips
Preheat oven to Gas 6/200ºC. Place 8 paper muffin
cases into a muffin tray.
Sift flour and baking powder into a large bowl. Stir
in the sugar.
Beat together the egg, vanilla, low fat spread, coffee
powder and milk. Stir until the coffee has dissolved. Add to the
dry ingredients with the mashed banana and stir until just combined.
Avoid over mixing and do not beat.
Spoon into paper cases and bake for 20-25 mins until risen
and golden. Cool on a wire rack.
Mix the liqueur with the icing sugar to make a smooth
icing. Spread over the muffins and decorate each with a banana chip.
