Blackberry Muffins

Blackberry Muffins

Makes 10

Points per serving: 2 (original points)

200g self raising flour
1 tsp baking powder
grated zest of 1 orange
pinch salt
4 tbsp sweetener eg Splenda
100g blackberries
2 medium eggs, beaten
175ml semi skimmed milk
40g low fat spread, melted

Preheat oven to Gas 5/190ºC/375ºF  Line a muffin tin with 10 paper cases.

Place flour, baking powder, orange zest, salt and sweetener into a bowl.  Stir in the blackberries and make a well in the centre.

Mix the beaten eggs, milk and melted spread and pour into the well of dry ingredients.  Stir gently until the flour has been incorporated and formed a lumpy batter, but don't over stir,

Spoon into muffin cases and bake for 15-20 mins until lightly browned.


Could also make with blueberries or raspberries.
