Monster Cookie
This recipe originally came from WW in the states. The
measurements are in CUPS. A cup measure is 240ml, so to make this, you
need cup measures, or a cup that holds 240ml (try a coffee mug)
Serves 1
Core recipe*
1/3rd cup oatmeal
1 tbsp semolina to make it core
1/3rd cup instant skimmed milk powder (eg Marvel)
¼ cup applesauce
¼ tsp cinnamon
¼ tsp baking powder
1 tbsp Splenda
¼ tsp cinnamon
¼ tsp baking powder
1 tbsp Splenda
1 tbsp raisins, optional (1 pt)
or use blueberries, fresh dates or seedless grapes for Core
Preheat oven to 180 C/350ºF/Gas4. Spray a nonstick cookie sheet with Fry Light.
Mix together all ingredients, except blueberries or grapes, if using. If using blueberries or grapes, stir them in gently.
Spoon a large mound onto prepared cookie sheet. Spread it out a little bit into a big round cookie shape.
Bake for 15-20 min, until golden brown on edges.
