Malt Loaf
Malt extract is available from chemist's shops. It is often
used as a nutritional supplement, being high in protein and B vitamins.
Serves 12
Points per serving: 1½ (original points)
225 g self raising flour
25 g light brown sugar, granulated
55 g sultanas
25 g currants
150 ml skimmed milk
1 tbsp malt extract
1 level tbsp golden syrup
5 spray low-fat cooking spray
Preheat the oven to Gas Mark 3/170°C/325°F. Put the flour,
sugar and dried fruit in a mixing bowl.
Warm the milk, malt extract and Golden Syrup together in a
small pan, until the three have blended. If the mixture looks a little curdled,
do not worry. Pour the liquid into the bowl and mix together well.
Spray a 450g loaf tin with low fat cooking spray. Put the
mixture in the tin and smooth it over with a little hot or warm water. Bake in
the middle of the oven for between 45 minutes and 1 hour.
Leave to cool a little before turning out. When cool, wrap
in foil or clingfilm. Leave for a day before slicing.
