Crunchy Toffee Apple Bars

A WW recipe, ideal for packed lunches, picnics and snacks, these fruity bars make a delicious addition to your day.

Serves 8

Points per serving: 3 (original points)

5 spray low-fat cooking spray
100 g light brown sugar, light muscovado sugar
50 g low-fat spread
2 tbsp Tate & Lyle Golden Syrup
150 g Jordans Porridge Oats
1 pinch salt
200 g apples, (baking), peeled, cored and thinly sliced
50 g cornflakes, slightly crushed

Preheat the oven to Gas Mark 4/180°C/350°F/fan oven 160°C. Spray an 18cm (7 inch) square baking tin with low fat cooking spray.

Put the muscovado sugar, low fat spread and golden syrup into a saucepan. Heat gently, stirring, until melted. Reserve 4 tbsp of this mixture, spooning it into a separate bowl.

Stir the porridge oats and salt into the melted mixture in the saucepan, then tip this mixture into the prepared tin. Arrange the apple slices on top in an even layer.

Mix the cornflakes into the reserved melted mixture and scatter them over the top of the apples, pressing them down slightly. Transfer to the oven and bake for 20-25 minutes.

Remove from the oven and cool in the tin, cutting into 8 bars when almost cold. Store in an airtight tin.
