Chocolate Squares

Chocolate Squares

 These gems are deliciously soft and chewy. You make the whole thing in the baking tin so there is very little washing up!

Serves 9

Points per serving: 3½ (Original points)

3 spray low-fat cooking spray
175 g self raising flour
1 heaped teaspoon cocoa powder
1 pinch salt
100 g light brown sugar, or muscovado
100 g polyunsaturated margarine, melted
100 ml water
1 large egg, beaten
1 teaspoon vanilla essence
5 g cocoa powder, (1 tsp), for sprinkling

Preheat the oven to 180°C / fan oven 160°C / Gas Mark 4. Spray a 20cm (8 inch) square baking tin with cooking spray and line with baking parchment or greaseproof paper.

Sift the flour, salt, cocoa powder and sugar into a mixing bowl. In a jug, mix together the cooled margarine, water, beaten egg and vanilla extract. Stir into the dry ingredients and mix together until combined. Pour into the prepared tin.

Bake for 20 minutes, then cool in the tin for 10 minutes before transferring to a wire rack to cool completely. Remove the lining paper. Cut cake into 9 equal squares and serve, sprinkled with cocoa powder.
